Tinolang Manok- a Filipino chicken broth dish that is perfect for rainy days.

Fall season has come and winter will be here soon so we tried our own version of Tinolang Manok to satisfy our cravings during rainy and cold days. Tinolang Manok- in english is Chicken Tinola is a special Filipino dish made up primary of chicken, papaya, ginger, malunggay leaves and lemon grass. But it is not limited to these ingredients, there are many variations to try and explore. Our version is replacing papaya with potatoes and malunggay leaves with parkchoi leaves because we only have those available in our area. Limited ingredients must not stop you from cooking your favorite Tinolang Manok, it will further enhance your creativity in cooking.

Ingredients:

  • Chicken- 1/2 kg, sliced in medium cuts
  • Potatoes- 3-4 pieces
  • Parkchoi leaves- 2 stems
  • Lemon grass- 2 sticks
  • Ginger- 2 small pieces
  • Garlic- 4 cloves
  • Onion- 1 piece
  • Salt- 2-3 tsp
  • Fish sauce- 4 tbsp
  • Pepper- 1-2 pinch for taste
  • Water from washed rice- last rinse- this will serve as your soup/broth (optional)

Simple Procedures:

  1. Save the water from washed rice (last rinse) and set aside- this is what I learned from a friend of mine who is a Kapampangan (from Pampanga). This is optional but makes a lot of difference in the taste. It’s just more delicious!
  2. Heat oil, then toss the garlic, onion, and ginger in the pan until golden brown.
  3. Sautee the chicken along with the spices until the chicken turns light brown- about 4-5 minutes.
  4. Add the salt and pepper to taste as well as the fish sauce at this point so it will be absorbed by the chicken and drop the lemon grass.
  5. Add in the saved water from the washed rice and bring to boil.
  6. At first boil, mix the ingredients well and add additional salt as to your preferred taste. This should take about 15-20 minutes to let the chicken cook.
  7. Add in the parkchoi leaves and switch off the stove, let the stored heat cook the leaves.
  8. Serve with rice and enjoy!
