Craving for some turmeric recipe? Here is our version of the famous Chicken curry- A balance of meat and vegetables, creamy from the outside and tender in the inside.

Chicken curry is an all time favorite on all parts of the world. The cuisine originated in India but quickly adopted in Asia, South America and Europe. The way to prepare a good curry is to cook it quickly from the moment that you add the sauce in the pan. Here is our version of this chicken curry adding potatoes, bell pepper and carrots in it.

Ingredients:

  • Chicken- 1/2 kg, cut into medium pieces
  • Coconut milk (in can)- we used half of the can
  • Curry powder mix- we used the Chinese version- 85g
  • Water- 2 cups
  • Garlic- 6-7 cloves
  • Onion- 1 whole medium size
  • Ginger- half medium size
  • Bell pepper/Capsicum- 1 whole size
  • Potatoes- 5-6 medium size
  • Carrots- 4 medium size
  • Salt- 2 tsp
  • Pepper- 1/2 tsp
  • Fish sauce- 2-3 tsp

Simple Procedures:

  1. This is an important step that enables the chicken to be tender. In a bowl, prepare the chicken. Mix some 3 tsp of the curry powder to the chicken as well as 3 tsp of fish sauce and set aside. This should sit for at least 30 minutes.
  2. On the 15th minute mark of waiting for the chicken, you may now prepare to slice the spices and vegetables.
  3. Dice the garlic, onion and ginger on medium fine sizes.
  4. Slice the potatoes, carrots and bell pepper into cubes.
  5. Heat the oil in pan. Sautee the garlic, onion and ginger until golden brown.
  6. Add in the chicken one by one. Mix thoroughly. The mixture of the fish sauce and curry powder can be set aside, you may use it later on once you add in the sauce.
  7. Add the water, this should cook the chicken and make it tender. Mix from time to time, this should take about 15 minutes.
  8. Add in the potatoes and carrots.
  9. In a small mixing bowl, mix the coconut milk and curry powder and add it into the pan together with the mixture you had in step #6. Mix thoroughly.
  10. Add the bell pepper. The main technique of a good curry recipe is to cook it fast once you add the mixture. Once the mixture is added, it should take about 5-8 minutes to fully cook the whole recipe. You will notice that the sauce becomes creamy and the whole aroma of the turmeric tells you that it is ready for serving.
  11. Switch off the stove and let it simmer for about 5 minutes before serving. It is best served with rice.
  12. Enjoy!
