





Brie, Cranberry, Wild Rocket Panini- A healthy, delicious and EASY to prepare bread recipe
So me and my wife had spent an afternoon tea at one of the cafes in Nottinghamshire. We came across with this bread recipe and was fascinated by it. Our fascination turned into a challenge to RECREATE the Panini we ordered. We don’t know what Panini means at all and we have just find it interesting thus ordering it. The panini we ordered has cheese on it, a filling of cranberry sauce, a sweet dip (I am not sure it it is a custard or a condensed milk) and layered with wild rocket (is a green leafy vegetable used in salads).
So when we got home, we planned that in a week’s time we will prepare our own Panini. The ingredients are very simple and is very easy to prepare, approximate preparation time is just about 15 minutes. A quick little research in google reveals that a Panini is an Italian bread which is usually served toasted. Panini can be achieved by using two specific Italian breads- Foccacia or Ciabatta. Since we do not have any idea about the type of bread to use, we chose the Baguette as our bread. We found out that the Baguette is a bit crunchier while the original Panini breads- Foccacia or Ciabatta are more fluffier. Regardless, we still loved the result of what we have prepared- the Baguette Panini.
This is a healthy recipe as most of the ingredients are just vegetarian oriented, except for the Brie cheese. The bread tastes good as it is toasted, the creamy flavor of the cheese mixed with the sweet cranberry and condensed milk brings a lovely mix and the unique taste of the wild rocket leaves counters the sweetness. It is just a perfect combination!
Here are the ingredients we used for this recipe, these can be interchanged of course, you may use the proper bread instead of the Baguette, you may add bacon (if you do not prefer the vegetarian theme), you may replace custard instead of the condensed milk.
Ingredients:
- Baguette bread (long)
- Wild rocket vegetable (1 pack from ASDA)
- Brie cheese (1 small pack)
- Cranberry Sauce/Paste (1 small container)
- Condensed milk (1 small can)
- *the ingredients that you will use for 2 Paninis are just few, so you should have some leftover of these ingredients that you can use for future use
Simple Procedures:
- Slice the bread into half.
- Spread the Brie cheese smoothly in the base bread.
- Spread the Cranberry sauce on top of the Brie cheese.
- Put in some condensed milk (you may use small, moderate or much amount depending on your taste).
- Place the Wild rocket leaves generously and cover it using the other half of the bread.
- Preheat the oven for 15 minutes (we used high top flame on max). Toast the Paninis for about 7-10 minutes until it turns golden/light brown, be careful not to over toast it!
- Enjoy!
